For those who attempted to perfect the Bloody Mary last night, try this... maybe with an oyster shooter... hehe

 

Eggs Florentine

2 eggs
Toast
A bunch of spinach
Hollandaise Sauce

Poach the eggs. Steam or boil the spinach in a little water. Put the spinach on the toast, the poached eggs, and topped with hollandaise Sauce.

Simple Hollandaise Sauce

Hollandaise sauce is also great served on asparagus, green beans, broccoli, cauliflower and many other vegies.

Ingredients

45g Butter
2 Egg yolks
4 Tablespoons milk
2 Teaspoons Lemon Juice
1/2Teaspoon Dry Mustard powder
Pinch Paprika

Method

Melt the butter in a saucepan over low heat. Add remaining ingredients and whisk until simmering and thickened. Add some smoked salmon & capers and half an avocado sprinkled with some lemon juice and fresh black pepper!!
…..Don’t forget my fresh juice & coffee please!

Hash Browns

What breakfast would be complete without Hash Browns??? There are many recipe’s available varying from simple and basic, to ridiculously difficult! Here’s a basic, easy and tasty one from me…

Ingredients

3 – 4 potatoes
4 cups water
1 x tablespoon spoon water
Salt & pepper

Method

Wash and grate the potatoes without peeling first. Boil for about 2 – 3 minutes. Drain the water while pressing down to remove as much as possible. In a heavy frying pan, melt the butter on low. Add the potatoes and toss with salt & pepper. Divide into about 8cm rounds or all together. Turn when bottom is browned. Cook for about 15 minutes or until golden brown. Great with BaconN'Eggs!
